Lulu's Kitchen: Party Food | Meat-free Meatballs & Sausage-free Rolls!
A Love Mae favourite, these meat-free meatballs & sausage-free rolls have been a very big part of Lulu's keep-up-if-you-can social life. These are the perfect addition to any party plan, catering to the taste buds of the young, and the young at heart!
Vary this quick & easy tofu-mix and by serving as tasty meat-free-balls, or bake in pastry for delicious-I-can't-believe-they're-meat-free sausage rolls!
Tofu-mix ingredients
500g of tofu (firm), broken & minced by hand for texture
2 eggs
3/4 cup of sourdough breadcrumbs (use gluten free crumbs if you prefer)
1 tablespoon soy sauce (we like Tamari)
Handful fresh herbs or 2 tablespoons dried herbs
Salt and pepper
*Additional ingredients for sausage-free rolls
Puff pastry (substitute with gluten free if preferred)
Tablespoon of melted butter
Method - Meat-free meatballs
Step 1. Pre-heat oven to 180 degrees
Step 2. Crumble tofu by hand until evenly broken up. Beat eggs and add to the tofu, mix together until evenly mixed. Now add all other remaining ingredients until well mixed. You may prefer to mix by hand, rather than with a wooden spoon. Finally, roll mix into meatball size.
Step 3. Bake meatballs on a non-stick tray in pre-heated over for approximately 20 minutes.
Method - Sausage-free rolls
Step 1. Pre-heat oven to 180 degrees. Defrost sheets of puff pastry and cut in half.
Step 2. Crumble tofu by hand until evenly broken up. Beat eggs and add to the tofu, mix together until evenly mixed. Now add all other remaining ingredients until well mixed. You may prefer to mix by hand, rather than with a wooden spoon.
Step 3. Cut puff pastry into 3 strips. On each strip of cut pastry, place a small amount of tofu mix down the side of each, and then fold the pastry to form little parcel strips, cut into preferred final size.
Step 4. Using a pastry brush, paint melted butter onto the rolled pastry parcels before baking in the oven for 20-30 minutes.
