A yummy alternative to tired old bacon & eggs, these Quesadillas are deliciously satisfying and filled with loads of fresh ingredients!
Ingredients - Guacamole
2-3 avocados
2 ripe tomatoes
1/2 red onion diced
ground black pepper
2 pinches of sea salt
squeeze of lemon or lime juice
2 tablespoons chopped coriander
* If you like a little spice, add some fresh red chilli, seeded and finely diced
Ingredients - Fresh Salsa
1/2 red onion finely sliced & diced
2-3 fresh ripe tomatoes
squeeze lemon or lime juice
touch of sea salt
fresh ground pepper
1/2 spring onion finely sliced
Ingredients - Quesadillas

1 cup of grated tasty cheese (or preferred cheese)
2 cups shredded chicken (can substitute with grilled vegetables, fish or other meat)
1/2 red onion, finely diced
2 tablespoons fresh diced coriander
1 red capsicum, finely diced
sour cream to serve

To make

To make the Guacamole, in a food processor add the avocado flesh, ripe tomatoes, diced red onion and blend until mixed. Add lemon or lime juice, a pinch of salt and pepper and the coriander. Place aside to serve once Quesadillas are ready.

To make the fresh salsa, finely dice the ripe tomatoes and mix with the finely slices, then diced red onions. Mix together with a squeeze of lemon and lime juice, and a touch of sea salt and fresh ground pepper to taste.

For the Quesadillas, mix the cheese, chicken (or veg, fish, or alternative meat) with the red capsicum, red onion, and coriander. Once all ingredients are mixed, place a heaped scooped between each tortilla. To cook, either grill or place in a sandwich press until tortilla is lightly toasted and the cheese has melted.

To serve, place Quesadillas on plate and add a scoop of the guacamole & fresh salsa with a spoonful of sour cream.
