Mango Raspberry Bircher Muesli Recipe

Serves 1 adult, or 2 small children.

1/2 cup of oats

1 tsp of flaxseed meal

1/4 tsp of cinnamon

1 tsp of maple syrup (optional)

1 tbsp of sunflower seeds

1 tbsp of pumpkin seeds

1/2 cup of almond milk

1/4 mango

1/2 cup of frozen raspberries

1. In a bowl mix all the ingredients together, and top with mango and frozen raspberries.

2. Leave overnight in the fridge and enjoy the next morning. Or you can leave it for a few hours instead of overnight.

We love how easy this recipe is, and how it allows you to make it when the household quietens down at night, so that you're prepared for the mad dash in the mornings.

Rolled oats reduce cholesterol, and are a low GI whole grain delivering a slow release of energy, so that your little one’s stay fuller for longer! The seeds provide essential fatty acids and nutrients. With the mango providing a good dose of fibre and vitamin A, and the raspberries giving you that boost of potassium and calcium needed for bone development and growth.

If you want to create the same look at home, Claire used the following items in her food styling:

An excerpt from Article 24 of the United Nations Convention for Children - You have the Right to be Healthy.

I choose to eat a rainbow of foods to grow me up strong, to give me energy, to keep me healthy. Crunchy green, raw orange, juicy red, ripe yellow, sweet purple.

The choices I make today will shape the person I will become tomorrow.
